Ingredients and spices needed to make Amritsari Baked Potato Kulcha (Fryer):
- For flour
- 2 cups ground
- 2 tablespoons ghee (Moin)
- 1 teaspoon powdered sugar
- 1/2 teaspoon of baking powder
- saline solution
- Flour as needed
- Rice flour for sprinkling, optional
- To fill:
- Peel and mash 4 medium size boiled potatoes
- 1 medium onion finely chopped
- 2 tablespoons finely chopped fresh coriander leaves
- 3 green peppers + 1 "ginger paste"
- 1 teaspoon red chili powder
- 1/2 teaspoon amchor powder
- saline solution
- Kasauri fenugreek to taste, black and white sesame seeds for sprinkling
- Enough milk to brush teeth
- If needed, amul masala is served on the kulcha

- In a bowl mix flour, baking powder and powdered sugar. Add oil and salt. Mix well.
